There are four seasons. Everyone agrees on this. We built a restaurant, a garden and a house around a fifth one, and people ask, gently, whether we know something they do not.

We do not. The fifth season is not on any calendar. It is the one that arrives when the meal is over and you are driving home in the dark, and something you ate an hour ago is still happening to you. It is the season of afterward. Of the thing you cannot quite describe to the person who asks how dinner was.

È quella che arriva quando la cena è finita e stai tornando a casa nel buio, e qualcosa che hai mangiato un'ora prima sta ancora accadendo dentro di te. È la stagione del dopo. We cook for that season. Everything on the plate is built to keep working after you leave, the way a piece of music stays in a room after the last note. The other four seasons feed you. The fifth one changes you, a little, and then lets you go.

The garden behind the house feeds the kitchen, and lately it has started feeding itself.

We stopped buying seeds. Not as a philosophy at first, but because the tomatoes we grew last year were better than anything in the catalogue, so we let a few go soft on the vine, saved what was inside, and dried it on the windowsill. This year those seeds became plants, and those plants will make next year's. A garden that remembers itself.

There are no poisons in it. This means we lose some of everything to something, and we have made peace with that. The lizards get their share. The birds take the figs we meant for the last course. What is left is smaller, stranger, and tastes like the specific piece of ground it grew in, which is the whole point.

Regeneration is slow and mostly invisible. You plant, you wait, you lose some, you save what worked, you plant again. It is not so different from cooking. It is not so different from anything worth doing.

He does not cook and he does not pour wine, though he has opinions on both. What he does is meet you at the door. He decides, in the first few seconds, that you belong here, and he communicates this by leaning the warm length of himself against your shin until you bend down. Guests who arrive tense from the drive are usually undone by this within a minute. We have watched it happen a hundred times and it never stops working.

He keeps the hours he likes. He supervises the garden from a patch of sun. He attends the quieter part of every evening, after the last course, when the music is still playing and nobody is in a hurry to leave. He says nothing, because he is a dog, and because the best hosts know that the thing a guest needs most is not words but the sense that they are welcome to stay exactly as long as they wish.

Tiene gli orari che preferisce. Sorveglia il giardino da una macchia di sole. Presenzia alla parte più quieta di ogni sera, dopo l'ultima portata, quando la musica suona ancora e nessuno ha fretta di andarsene.
