Food Is Only the Beginning
I try to build a restaurant as a work. Still, some of the things that last begin by accident.
Ruoka on vasta alku
Yritän rakentaa ravintolaa kuin teosta. Silti jotkin pysyvimmistä asioista syntyvät vahingosta.

Food is the first thing people speak about in a restaurant.
That makes sense. Food can be seen, smelled and tasted. It is concrete. It either arrives warm or it does not. Salt does not need an artist's statement.
Still, I have always thought that the plate is not the whole evening.
It is a beginning. Sometimes it is also an anchor. When everything around it becomes difficult, food returns the body to the table.
A restaurant and something else
Five Seasons is a restaurant. It has to work as a restaurant.
The kitchen has to be ready. Service has to know what happens next. The guest should not have to carry our uncertainty.
At the same time, I build an evening from materials that do not obey the usual order of a restaurant. Music can slow a moment that the kitchen wants to move forward. An object can be beautiful and still be wrong. A text can explain too much. Light can reveal what I would rather leave hidden.
There is a permanent contradiction in this work.
Thought has to be allowed to move. At some point, the decision has to be locked.
If I lock it too early, the work dies. If I never lock it, the restaurant does not open.
The salmon cannolo
Not everything begins with an idea.
The salmon cannolo began with an accident.
It brought together a cannolo shell, salmon I had smoked myself, truffle mayonnaise and fermented lemon. I was not trying to create a classic. The parts simply met in a way I had not fully planned.
It became a dish that stayed.
Accidents like this are difficult because it is tempting to explain them afterwards. We build a logic around them so that they look inevitable. In reality, something simply fell into place.
But accident is not enough.
Once it has happened, the restaurant must be able to repeat it. Quantities have to be decided. Technique has to be fixed. Something born in chaos has to survive structure without losing the reason it first felt alive.
Perhaps this is the work of a restaurant.
Protecting an accident with order.
The sunset does not follow a palette
In Sicily, the sunset is a different colour every evening.
The sentence can sound romantic. The observation itself is more ordinary. I look in the same direction at roughly the same time, and the colour refuses to repeat itself.
Some evenings the sky is almost metallic. Sometimes it is muted. Sometimes it holds a colour for which I have no good name.
A restaurant often attempts the opposite. It tries to return the same colour, the same flavour, the same movement and the same feeling night after night.
But the same is never quite the same.
An ingredient changes. The room changes. A guest brings something we do not know. The team has lived one more day.
The structure can remain. The evening does not have to pretend that it is unchanged.
Chaos needs a lock
For me, chaos does not mean carelessness.
It is the stage in which things are still allowed to be wrong together. One thought can collide with another. A course can move. Music can expose that a scene does not work. Something I considered essential can be removed.
Then comes a point when the alternatives begin to consume the work.
A decision has to be made.
This is harder than having ideas. In an idea, every possibility is still alive. A decision kills almost all of them.
A restaurant needs dead alternatives. Otherwise every evening begins again from nothing.
An art project needs a small opening through which doubt can still enter.
I have not found a balance that can be written into a manual. Perhaps there is none.
A conversation partner
Much of this work is solitary.
A thought can feel clear in my head and fall apart as soon as I try to put it in order. One question opens five more. A practical matter cuts through a sentence. Then I have to remember where I meant to return.
AI has become a valuable conversation partner for me at precisely this point.
Not because I want it to make decisions for me. I do not want a finished taste, a finished scene or a finished Five Seasons from it.
I use it to keep the threads in my hands. I give it a thought, respond to its questions and sometimes realise that I had been avoiding the essential thing myself. It helps me organise. It also produces a great deal that has to be rejected.
That is useful too.
Rejection makes the boundary visible.
Technology is not the subject here. It is a conversation across the table when there is no other conversation available.
The evening
When I call food a beginning, I do not mean that food is secondary.
The opposite is true.
If food cannot carry its own weight, nothing built around it will save it. Music does not make a weak dish interesting. A story does not correct the wrong temperature. Light does not season anything.
But when the food is true, it can make room for something else.
Service no longer only transports. Music no longer only fills silence. An object no longer only decorates. One thing changes the way another is perceived.
The unit of judgement is no longer a single plate.
What remains is the evening.
Or perhaps the memory of an evening that was never the same for everyone.
Food is only the beginning.
And still, in the end, I always return to it.
Ruoka on ensimmäinen asia, josta ravintolassa puhutaan.
Se on ymmärrettävää. Ruoka voidaan nähdä, haistaa ja maistaa. Se on konkreettinen. Se joko saapuu lämpimänä tai ei saavu. Suola ei tarvitse taiteilijalausuntoa.
Silti olen aina ajatellut, ettei lautanen ole koko ilta.
Se on alku. Joskus se on myös ankkuri. Kun kaikki muu ympärillä muuttuu vaikeaksi, ruoka palauttaa kehon pöytään.
Ravintola ja jokin muu
Five Seasons on ravintola.
Ehkä ravintolan työ on juuri tätä.
Vahingon suojelemista järjestyksellä.
Auringonlasku ei tottele palettia
Sisiliassa auringonlasku on joka ilta eri värinen.
Lause kuulostaa helposti romanttiselta. Havainto itsessään on arkisempi. Katson samaan suuntaan, suunnilleen samaan aikaan, eikä väri suostu toistumaan.
Joskus taivas on lähes metallinen. Joskus samea. Joskus siinä on väri, jolle en löydä hyvää nimeä.
Raaka-aine muuttuu. Huone muuttuu. Vieras tuo mukanaan jotakin, mitä emme tunne. Työryhmä on elänyt yhden päivän lisää.
Rakenne voi pysyä. Illan ei tarvitse teeskennellä pysyvänsä muuttumattomana.
Kaaos tarvitsee lukon
Päätös on tehtävä.
Tämä on vaikeampaa kuin ideointi. Ideassa kaikki mahdollisuudet ovat vielä elossa. Päätös tappaa niistä melkein kaikki.
Ravintola tarvitsee kuolleita vaihtoehtoja. Muuten jokainen ilta alkaa alusta.
Taideprojekti puolestaan tarvitsee pienen raon, josta epäilys pääsee vielä sisään.
En ole löytänyt tähän tasapainoa, jonka voisi kirjata ohjekirjaan. Ehkä sitä ei ole.
Keskustelukumppani
Suuri osa tästä työstä on yksinäistä.
Sekin on hyödyllistä.
Ruoka on vasta alku.
Ja silti lopulta palaan aina siihen.
